Project Title: Food Waste Reduction across Thwaites managed Estate

Project description: In 2019 we started working with WRAP and Guardians of Grub to help measure, track and reduce our food waste. Starting with three pilot sites and then rolling this our across the managed estate.
From this we agreed to Guardians of Grub’s target of a 50% reduction from our baseline year (2020) by 2030.
At site level kitchens separate and weigh food waste into three categories, preparation, plate, spoilage and other waste.
Outcomes: The tonnage of waste is down 36% since 2020.
In terms of daily reporting of data from the chefs has risen from 42% of the estate in May 2022 to 92% in April 2025.
Some of the benefits witnessed are less over purchasing, better portion sizes, reduced waste collections and improved stock management. Alongside this there is also a cost saving benefit to this as we are ordering, cooking and throwing away less food.
